Broccoli & Lemon

When we roast broccoli… we add some broccoli greens and thinly sliced lemon sprinkled with vanilla sugar and red pepper flakes halfway through…

Just before serving we add…

A handful of grated Parmesan or Pecorino

Maldon Sea Salt Flakes and freshly ground white peppercorns

drizzle of extra virgin olive oil and

reserved broccoli crumbles

Lastly… we anoint all with fresh lemon juice.

To make…

Preheat your oven to 400 degrees.

Wash, trim and slice your broccoli spears like you would a loaf of bread. Make sure your slices are the same thickness.

Reserve the broccoli crumbles for garnish.

Prepare the broccoli greens… remove the ribs and toss them in olive oil to lightly coat. Set aside.

Next… thinly slice your lemon… about 10 slices. Sprinkle each slice with red pepper flakes and vanilla sugar. Set aside.

Spread your prepared broccoli flat side down on a roasting pan in one layer.

Drizzle the broccoli with olive oil and place it on a shelf in the lower third of your preheated oven.

When you see it start to lightly brown… about 15 minutes or so… remove it from the oven and flip it with a spatula.

Now add just enough of your thinly sliced lemon to sparsely cover the surface of the vegetables, the red pepper flakes and the Broccoli greens. You’ll want the lemon to give flavor without overpowering.

Let all roast until it turns to a rich brown color.

Remove from the oven and finish as described above. YUM!!!
