Firefly Farms, Accident, Maryland

FireFly Farms Creamery and Market provides Just Simply… Cuisine with its products to use in our classes on an ongoing basis.

Firefly offers award‐winning premium goat cheese that features the distinct regional flavors of Mountain Maryland. Each cheese is artfully handcrafted and aged with precise detail offering distinguished flavor and exceptional texture. Made in Accident, Maryland, FireFly Farms’ cheeses are produced with agriculturally sustainable, locally‐sourced fresh goat’s milk and time‐honored, traditional methods of cheese making.

Over the past 20 years, Founders Mike Koch and Pablo Solanet have made FireFly Farms into a successful hand-made cheese business grounded in partnerships with farmers and a strong commitment to sustainability. FireFly is actively committed to caring for the land and protecting the environment for today’s communities and future generations.

J.Q.Dickinson Saltworks, Malden, West Virginia

J.Q. Dickinson salt is naturally sourced from brine in an ancient, untouched sea called the Iapetus Ocean (predating the Atlantic) trapped below the Appalachian mountains. It is free of contaminants and heavy metals that may be found in other oceans.  Gleaned from the earth by an underground brine aquifer, the salt is then processed naturally using the power of the sun for solar evaporation.  The result is a beautiful crystal that enhances the flavor of any dish.  

J.Q.Dickinson has come together to revive their 200-year-old family trade in Malden, West Virginia, and once again produces salt for our local communities and beyond. With love of the land and shared culinary passion, J.Q.Dickinson has worked to produce a rare, small-batch finishing salt, harvested from the ancient Iapetus Ocean trapped underneath the mountains of Appalachia. Today, they are reviving their family’s salt-making tradition on the very same land where it all began.  To celebrate, they invited family members from across the region to a feast beside their long standing barn with a meal that showcased their newly harvested salt and strong commitment to a farm-to-table lifestyle. The salt imbued nearly every dish on the menu, from the pork chops and bread, to the local squash from the farmer’s market and sweet pecan pies.

Maldon Salt, Essex, England

Maldon provides Just Simply… Cuisine with its quality products on an ongoing basis. Maldon takes a slightly salt-centric view of the world and has been producing the finest natural sea salt for the last 130 years. Salt as it should be, hand-harvested with the distinctive flaky texture and taste that lends piquancy to virtually any dish. You could contend that Maldon Salt is really made by nature, with just a little helping hand from man to release it from the clutches of the environment.

Maldon Sea Salt Flakes are loved by chefs and cooks the world over. It’s the soft flaky texture of the sea salt crystals and the cleanness of the salt flavor that makes the difference. None of the bitter after taste that some salts leave; instead a freshness that enhances the flavor of all natural and fine foods.

Seawater is filtered and boiled which, reassuringly, removes any impurities, and then heated until the salt crystallizes. If this sounds easy, there’s an art in temperature and timing and in particular, the traditional ‘drawing’ of the salt by hand from the pans, that confounds anyone without a salt maker’s skills. Natural, traditional, Maldon salt is ancient and modern. The result is the pure white crisp clean crystals that can only be Maldon salt.

Rodman’s is Just Simply… Cuisine’s exclusive wine purveyor. They also provide our cooking classes with olive oils, vinegars, Maldon Sea Salt Flakes and other international specialty foods.

Rodman’s, a Washington Institution, is the area’s original discounter of nationally branded products, family owned and operated since 1955. Rodman’s has been anointed by the Washington Post as “The Weirdest Little Drugstore In Washington.” Over the years and three generations later, Rodman’s has evolved into an international marketplace filled with unusual and exotic foods, wines, craft beer and ales, housewares, and the finest European soaps and body care products you can find.
