Our Panzanella

Ingredients…

Equal amounts of stale bread and tomatoes

Fresh basil

1 medium cucumber, half peeled and seeded​

1/2 red onion, peeled

Capers, rinsed and drained

Light vinaigrette… make you own

Pecorino

To Make…

Tear a stale loaf of rustic bread into bite size pieces. Spread them on a baking sheet and toast in a low oven… 275/300 degrees F until crisp.

Chop vine ripe tomatoes into bite-size pieces.

Chop cucumber into bite size pieces.

T​hinly slice​ the​ red onion.

Thinly slice fresh basil.

Mix all together.

Add capers and 1/2 cup of the vinaigrette. Toss gently.

Add more vinaigrette as desired.

Garnish with freshly grated Pecorino.
