Full of Flavor Hanger

At least 1/2 hour ahead marinate 3 lbs. of hanger steak with…

The zest of 2 limes

1 jalapeno, seeds and pulp removed, sliced thinly

½ red onion, peeled and sliced thinly

1 serving spoon of chopped garlic

1 large nub of ginger, peeled and grated finely

Freshly ground peppercorns

“The Mediterranean Way’s” Honey Ginger White Balsamic

EVOO to coat

Maldon Sea Salt Flakes to finish

Fresh cilantro to garnish

Preheat grill for 10 minutes or so. Cook meat on a medium high flame to desired doneness using the finger-poking method. The thickness of the meat will determine to length of time on the grill. Cover with foil and let rest for 5- 10 minutes. Slice thinly against the grain on a diagonal. Season with Maldon.

In the meantime… transfer the marinade to a sauté pan and cook jalapenos, onion and garlic to the edge of burning. Spoon over the steak, garnish with fresh cilantro and serve.
