Air Drying Spinach…

For those of you who take our classes… you’ve learned about rinsing and air drying your produce before putting it in the fridge…

We get home from the market and spread a large beach towel on the island, fill our prep sink with ice cold water and submerge our fruits and veggies for about 10 minutes or so. For dirt laden produce like spinach, leeks and cilantro… you may have to repeat this process and drain, rinse and refill your sink a few times. After cleansing… everything goes onto our beach towel where it’s gently tossed often for a slow air dry.

When completely dry… we loosely wrap our spinach in a flour sack towel before we chill it in our produce drawer. If your fridge cools unevenly, you might want to place your flour sack wrapped greens in a plastic bag to protect them and to keep them crisp!
