The We’re Cookin’ Foodcast: Welcome to Our Kitchen

Have you ever wondered how Just Simply… Cuisine got started, over 20 years ago? In this premiere episode of our new foodcast, We’re Cookin’, my wonderful co-host, Radell Peischler, joins me as I tell the story of how we were inspired to teach home cooking and why we believe that “good food means good life.” Each episode also features one easy recipe that you can make right along with us in your own kitchen.

Episode 1 “Can Do” Recipe: Compound Butter Parmesan Toasts  

Ingredients…

1 loaf of Ciabatta or other hearty white bread, sliced.

1 lb. unsalted butter, softened so you can easily poke your finger in it.

Generous pinch of Maldon Sea Salt Flakes

Several turns of white and black peppercorns, freshly ground

Pinch of red pepper flakes, to taste

Zest of one lemon

Generous pinch or two of Parmesan and/or Pecorino, grated finely

Generous pinch of Italian Flat Leaf Parsley, chopped finely

Mix the above ingredients together and set aside until ready to use.

To store… refrigerate or freeze indefinitely.

To Make the Toasts…

Turn on broiler.

Line up bread slices on a large sheet pan.

Broil or toast your bread on one side. Remove pan from oven and flip slices.

Now… generously smear your toasts with compound butter and sprinkle with grated Parmesan.

Broil or toast bread again until the tops are lightly browned and bubbly.

Serve hot out!

Tips from Episode 1:

  • Buy 2 loaves of sliced Ciabatta or other hearty white bread… in case you burn the first one!
  • Get to know your vendors and learn the who, what, where, why and how to source your food.
  • Eat with intention!
